Creamy Carbonara With Bacon Style Rashers




Ingredients

  • 300g fettuccine

  • 1 pack Vegie Delights Bacon Style Rashers, cut into 2cm pieces

  • 1 tablespoon extra virgin olive oil

  • 1 (150g) brown onion, peeled and diced

  • 3 cloves garlic, peeled and finely sliced

  • 2 cups (500ml) plant based milk

  • 1 tablespoon nutritional yeast

  • 3/4 cup (160g) semi dried tomatoes, roughly chopped

  • 1/4 cup white flour

  • 2 tablespoons parsley leaves, finely chopped

  • 1/2 cup (40g) Bio Cheese Cheddar Block, grated

  • sea salt and black pepper


Method

  1. Boil a large pot of water, add fettuccine and cook until Al Dente.

  2. Whilst pasta is cooking heat a frypan on medium heat, add oil, onion, garlic and Vegie Delights Bacon Style Rashers and cook, stirring frequently for 10-12 minutes.

  3. Add plant based milk, nutritional yeast, semi dried tomatoes, flour, season with sea salt and black pepper and continue stirring to thicken the sauce for 3-4 minutes.

  4. Once pasta is cooked add sauce to pasta, toss to coat and serve sprinkled with parsley and Alternative Dairy Co Parmesan if desired.
